Trading off seats mid-flight is probably frowned upon by the TSA at this point

On each of the (domestic) flights I was on in the last week, we were told by the crew that we weren't even allowed to use the bathrooms in cabins other than the one we were ticketed in, so I doubt they'd look favorably on the idea of switching out seats mid-flight.
